3 C Sweet Potatoes -NOT YAMS (cut up and boil with their skins on)
Cool and mash
1 C Sugar
2 Eggs
1 tsp. Vanilla
2/3 C milk
1/4 C Margarine (not butter)
Whip in mixer
Spray pan with Pam. 8 X 10 pan is ideal, but can use 9" circle or 8 X 8
Topping
1 C Brown Sugar
1 C Chopped Pecans
1/3 C Flour
1/3 C Butter
Bake at 350, 40-45 minutes
