1 C butter, room temperature
1 1/2 C dark brown sugar, packed
2 tsp vanilla
2 large eggs
2 1/2 C ground old fashioned oats (use blender)
1 tsp baking soda
1 tsp salt
3 C old fashioned oats (left whole)
1 C chocolate chips
Preheat oven 350 degrees F
Line 2 baking sheets with silicone mats or parchment paper.
Beat butter and brown sugar together until fluffy, about 2 minutes in a stand mixer.
Beat in vanilla and eggs.
Stir in ground oats, baking soda and salt until blended.
Stir in whole oats.
Mix until well combined.
Stir in chocolate chips.
Scoop large 2-inch scoops onto on the baking sheet.
Bake in heated oven for 10 to 12 minutes.
